ABOUT PROJECT ONE LIGHT AND THIS COFFEE.

Project One Light (POL), founded by Olina Cai, is a specialty Yunnan coffee processing business located in the heart of Yunnan and consists of various Q-graders and coffee processing experts. They emphasise careful management of the growing environment and strict quality control to ensure the quality of coffee cherries grown and harvested. At the same time, they insists on the integrity of specialised processing methods to ensure consistency. 

Peach Oolong is NOT a co-fermentation or infused coffee. It undergoes an anaerobic natural process with added yeast to selectively amplify the flavour characteristics that already exist in the coffee. Afterwards, the coffee is placed on sun-drying shelves for two weeks.
