ABOUT ADRIANA GONZALEZ AND THIS COFFEE.
Adriana Gonzalez, an ardent female farmer and producer partner of Osito, owns and operates Buenos Aires in Las Delicias, Huila. For the past five years, she, alongside her family, have worked hard to increase the quality produced on their farm.
Grown at 1,950 masl, Adriana's Pink Bourbon undergoes meticulous processing. First, cherries are carefully sorted. The coffee is then sealed in a tank with a saline solution (lactic fermentation) for a 60-hour fermentation. Next, the coffee is pulped and fermented for a further 60 hours using the same solution from the first phase of fermentation. A gradual 25-day drying period culminates in a coffee of distinction, boasting clarity, bright acidity, and excellent sweetness.
