Frequently asked questions

Our roasting philosophy

There's no simple way to describe how we roast.

For filter, we approach each coffee in a way that achieves great solubility, high clarity and high perceived sweetness without tasting grainy/green/underdeveloped. Objectively, in terms of "Agtron colour" this puts us in the "extra-light" range.

For espresso, we roast to achieve optimal solubility at your standard 1:2 ratio- aiming for the perfect mix of clean sweetness, texture and balance in black and milk coffees.

But within these general approaches, we also take into consideration the screen size, water activity, processing method, coffee varietal, country of origin etc. These help us to determine little shifts in our decision-making during the roasting process so that each coffee is expressed in the best way possible.

ROASTING AND SHIPPING

We roast every Wednesday on a Probat P12 and fulfil on Friday the same week. This allows us to both complete our strict internal quality control for approval prior to shipping.
