ABOUT THIS COFFEE
This coffee was grown by Luz Mila Gonzales at the farm El Oasis. This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.
This micro-lot is 100% Tabi. This is a new variety developed by “Federacion Nacional de Cafeteros.” This unique variety is a cross between the Timor Hybrid, Bourbon, and Typica.
ABOUT LUZ MILA GONZALES
Doña Luzmila is a dedicated first-generation coffee farmer and has been producing coffee since 2008 with the support of her husband, Eider. Luzmila owns two farms in Gaitania, Tolima. The first is El Oasis, which is 10 hectares in size and located at 1750m.a.s.l. The second is El Recreo, which is 4 hectares in size and is located at 1600m.a.s.l. Luzmila produces mainly traditional Colombian varieties on her coffee farms such as Castillo, Caturra, Colombia, and Typica. In addition to coffee, she also grows beans and fruit trees such as mandarin.
El Oasis was the first farm she was able to afford with the help of a loan from the bank. Doña Luzmila was new to growing coffee and relied heavily on the support of her neighbours to help guide her on how to nurture coffee trees and produce great coffee.
After 4 years of learning and overcoming challenges, Luz Mila felt proud of the coffees she produced. She later shifted towards organic practices-- eventually gaining an Organic certification.
Luzmila participates in local coffee competitions and her coffee is always among the finalists. In addition to growing coffee, she has another family-run business that they operate in the local town which sells clothes and beauty products. Luzmila and her husband have four children, 2 boys and two girls. The children love to help
out on the farm with their parents in their spare time. The family cherish spending time together around the dinner table and enjoying each other's company.

Shipping
We currently roast every Wednesday on a Probat P12. Each batch of coffee is roasted the week before dispatch. This allows the coffee to rest to the point at which we consider it at its peak when delivered.

Every coffee tastes best at various times depending on roast degree, varietal, processing etc. At Collusion, we generally find that our coffees tastes best anywhere from 1 week to 2 months post-roast.
